Helpful hints

  • Dawn uses sirloin steak for her Shish Kebabs, but you can use whatever meat you prefer.
  • If using wooden skewers, soak them in water for at least 30 minutes prior to grilling to avoid burning them during the cooking process.

We made it for Father's Day and everyone loved it. We are very new to the CKD diet so we didn't expect such good flavor. It will be part of our new cookbook. Thanks, Dawn! (We are wondering about adding mushrooms and pineapple chunks - what do you think?) Dietitian comment: Pineapple and mushrooms are both acceptable for a kidney diet. Enjoy!

I made the marinade and divided the raw meat into 4 portions (2 servings for each) and put it in the freezer. It was easy to pull it out and saute in a skillet. I did not use the peppers but made some other vegetable (not marinaded) with it.

Made these for a unit 'End of the Summer' party-they were fairly easy and the patients likes them. We grilled them the night before, and then reheated in a nesco-worked fine.

I want to know about lamb. How would using lamb change it? (especially potassium) Moderator: Potassium decreases slightly to 434 mg. Calories and fat are slightly higher, phosphorus is 200 mg and other nutrients are about the same.

What would the difference be in using venison in you recipe? Is deer meat good for someone with kidney disease Moderator reply: Venison is similar to a leaner cut of beef. The calories and fat are decreassed to 263 cal and 13 g fat, potassium 471 mg, phosphorus 264 mg and protein 29 g. The other nutrients are very close to the original recipe values.
