I followed the recipe with the exception of reducing the salt in the sauce by half. That worked just fine. This was very good. One question: You answered a question regarding the potassium in the recipe by explaining that a 3 ounce portion of meat contains 300 milligrams of potassium. But the recipe calls for a pound of pork and says it is 4 servings. Does the 3 ounces refer to cooked meat or raw? Dietitian comment: it refers to the cooked portion or meat. A general rule of thumb is 4 ounces raw meat equals 3 ounces cooked.

What makes the potassium so high in this recipe? Dietitian comment: In general each ounce of cooked meat provides 100 mg potassium per ounce. With a 3-ounce serving that accounts for 300 mg potassium. The remaining 173 mg is mostly from the apples then remaining ingredients. If you are following 2000 mg low potassium daily diet this is below 1/3 or your goal and will fit nicely into your plan. My wife made this for our Sunday dinner and it was EXCELLENT. The apple spice sauce/compote was very tasty and much better than plain applesauce. It had the sweetness and texture to complement the chops. We also had the potato/cauliflower mash (DaVita recipe) along with the chops[INVALID]what a great combination. You know it's good when your 16 yr old daughter goes for seconds, doesn't usually happens. We will make this one again soon.

Excellent! I brushed the chops with oil and then cooked them on stove top in pan. Also, I did not have all of the individual spices, so I used 1/2 tsp of allspice and it turned out great!

I tried this for the first time along with the Cranberry & Roasted Garlic Risotto. It was TO DIE FOR! I made a few revisions. I left the nutmeg out and I added some apple cider and a little (cornstarch & water mixture) to thicken my sauce a little. The directions say to brown sugar, salt, pepper. nutmeg, cinnamon & apples, but I found that alone did not provide much of a sauce and it was not as thick as I liked. This was SO DELICIOUS and my husband gave me a big THUMBS UP. SO this one goes in the KEEPERS file!
