Helpful hints

  • Buy fresh wing drummettes. A 1-1/4 pound package contains 12 drummettes. If unavailable, ask your butcher to cut whole chicken wings into drummette size.
  • Boneless chicken pieces may be used in this recipe. Check for doneness after 20 minutes.
  • Hot sauce brands vary greatly in sodium. Choose a brand with less than 140 mg sodium per teaspoon.
  • Make the Roasted Red Pepper Tomato Sauce (under Sauces & Seasonings in the recipe collection) and use 1/2 cup plus the Tabasco sauce if desired.

As is deserves 2 stars. Needs tweaking. I seasoned with paprika, garlic powder, onion powder, lemon pepper, cayenne , put in oven at 450 on a rack, rendering most of the fat and then sauced in low sodium bbq sauce.

I LIKE the second joint on the wing, so I bought whole wings and cut them myself...marinated them overnight in lemon pepper and cayenne pepper rub...dried them in fridge from dawn to 1 hour before game time...lightly sprayed them with canola oil spray, baked them on a rack in a sheet pan for 35 minutes, (yea, it got a LITTLE smokey..!) Then took them out and sauced them...returned them to oven on broil 3-5 minutes or so on each side to crisp them a bit and carmelize them...and served at kick-off with carrots and celery sticks and a little Ranch dressing and Sour Cream on the side to cool the burn...SOOO GOOD.

You don't want them soggy with rubbery fat. 1. before cooking, rinse then dry the wings with a paper towel. 2. Season your wings with spice! I like to rub on a combination of garlic powder, onion powder, paprika and black pepper. 3. If you have time, put your wings in the fridge overnight uncovered to dry them out a bit. 4. Melt some of the butter before hand and brush it on the wings. 5. Put a couple sheet of baking parchment on a sheet. The parchment helps them crisp up almost like they were fried! place your wings on the sheet, spaced out. 6. Turn the oven up to at least 425. You need enough heat to render the fat on the wings. 7. Cook them for 15 minutes then flip and cook for another 15. Check for doneness. 8. IF you want a sticky glaze, brush them with the sauce and put them back in for five minutes then flip 'em and repeat for another five. 8. If you want to toss them, pull them out, dry them with a paper towel then toss them around in a bowl with the sauce. These steps make take a little more time and effort, but in my opinion you get a much better wing!
