Artichoke Relish on Toasted Pita

Looks really good, I love all ingredients. This website is very hard to save my recipes. Dietitian comment: You can open DaVita Diet Helper, find the recipe in the Recipe Search and mark it as a favorite. The newer recipes may not be available in Diet Helper yet, but will be soon.

Can this be frozen ? Dietitian comment: I would not advise it. The fresh ingredients will not have the same quality once it thaws.

What would the sodium be if I leave out the Parmesan cheese? Family can not have dairy. Dietitian comment: Sodium is reduced to 150 mg per serving instead of 166 mg.

Artichokes are listed as high in potassium - yet this recipe indicates we can eat it? Why is that? Please help me decipher and/or rationalize the two perspectives. I like artichokes but have taken them off my diet list of things I can have. Dietitian comment: Artichokes are high in potassium[INVALID]one cooked artichoke has 425 mg potassium. But what makes this recipe kidney-friendly is the amount of artichoke per serving. If you stick to 1 to 2 servings you are still within the guidelines for a kidney-friendly appetizer.

Made this recipie for a dinner party so my husband would have something to eat within his dietary needs. It was a huge hit. I served it in small tart shells, an not one was left and several people asked for the recipe! Easy to make, great taste!
